LAZY GIRL DINNER 🫶🏼 One Pot Chicken & Gnocchi Pie 🥧 Serves 4 Ingredients
1 tbsp olive oil
1 onion, finely diced
1 celery stick, roughly diced
1 large carrot, roughly diced
500g chicken thigh fillets, cut into bite-sized pieces
1.5 tsp sea salt flakes
1/2 tsp black pepper
30g unsalted butter
360ml chicken stock
240ml milk
1 tsp Dijon mustard
1 tsp dried thyme
100g uncooked gnocchi
75g frozen peas
80g freshly grated Parmesan
1.5 sheets ready-rolled puff pastry (about 480g), partially thawed and cut into rectangles
1 egg, whisked
1 tsp sesame seeds Method 1. Preheat the oven to 200°C (180°C fan). 2. Heat the olive oil in an ovenproof pot over a medium heat. Add the onion, celery and carrot and cook for 5 minutes until softened. 3. Add the chicken, salt and pepper and cook until lightly browned on the outside. 4. Add the butter and stir until melted. 5. Pour in the stock and milk, then add the mustard and thyme. Simmer for 5 minutes, stirring occasionally. 6. Add the gnocchi and simmer for 3 to 4 minutes until it floats. 7. Stir through the peas and Parmesan. 8. Lay the pastry rectangles over the top, overlapping slightly. Brush with the whisked egg and sprinkle with sesame seeds. 9. Bake for 20 to 25 minutes until the pastry is golden and puffed. Serve and enjoy! 😊
