Peri Garlic Butter Chicken Kebabs 😮💨 SUPER easy, high protein and each portion under 500 cals.. 🤭 These juicy peri chicken kebabs are served on a toasted flatbread with a creamy peri yoghurt base, with tangy pickled red onions and sweet cherry tomatoes 🔥 ‼️ Get more low-cal, high protein recipes in my cookbook “Low-Cal Kitchen Bangers” linked in my bio💕 Ingredients (serves 2): 300g thinly sliced chicken breast 1 tsp smoked paprika 1 tsp peri seasoning 1 tbsp lemon juice 2 tbsp peri marinade 2 flatbreads 2 spoonfuls of pickled red onions 6 cherry tomatoes quartered For the garlic butter glaze: 15g reduced fat butter 1 tbsp peri sauce 1 tsp honey 1 tsp chopped garlic ½ tsp lemon juice Yoghurt base: 60g thick greek yoghurt 1 tbsp peri sauce ½ tbsp lemon juice ¼ tsp dried chives Pinch of salt 💕Season the chicken with the smoked paprika and peri seasoning, before adding in the lemon juice and peri marinade. Mix well before covering and leaving to marinate for a minimum of one hour. 💕When ready to cook, thread the chicken onto skewers. If using wooden ones, soak for 30 minutes. 💕Air fry for 12-14 minutes at 200 degrees celsius, or bake for 15-17 minutes at the same temperature. Rotate part way through cooking. 💕Meanwhile, make the yoghurt sauce. 💕Once the chicken is almost cooked, in a small pan add the butter until melted, before adding in the remaining glaze ingredients, leave over a low heat for 1-2 minutes. Use ½ to brush over the chicken for the remaining cooking time. 💕Toast the flatbreads according to packet instructions. 💕Spread the yoghurt over the base of the flatbread. Top with the pickled red onion and quartered tomatoes. 💕Either top with the skewers to serve, or use a knife to cut finely down the skewer and allow the meat to fall.
