matcha starts to deteriorate after about 2 weeks of being exposed to the air hence the small tins. I would store your powder in an airtight container or tin just to keep it fresh!

Organic doesn’t mean anything sadly. Ceremonial is the highest quality. Once matcha is exposed to air, it oxidizes and loses its freshness, flavor, nutrition, which is why it comes in small tins.
