Homemade Fish Fillet Recipe  100x better than McDonalds and not only because it actually has a full slice of cheese   
Serves: 4 Fish Fillet Batter * 4 cod fillets (I used loin) * 100g plain flour * 30g cornflour * 1 tsp garlic granules * 1 tsp onion powder * ½ tsp salt * ½ tsp white pepper * 1 tsp paprika * 1 cup cold soda water * Extra plain flour for dusting Tartare Sauce * 120g (½ cup) mayo * 1–2 gherkins, finely diced * 20g fresh dill * 1 tsp onion powder * 1 tsp garlic granules * Salt to taste * 2 tbsp pickle juice * Juice of ½ a small lemon * 1 tsp Dijon mustard METHOD 1. Salt the cod loins on both sides and let them sit for 10 minutes to draw out moisture, then pat dry with paper towels. 2. Heat oil in a pan over medium heat, ensuring the oil temperature is between 175°C and 190°C. 3. Mix the flours and seasonings, then slowly add soda water to form a batter (adjust water as needed). 4. Coat the cod in plain flour, shaking off excess. 5. Test the oil by dropping in a bit of batter - if it floats and is at the right temperature, it’s ready. 6. Dip the cod in the batter, letting excess drip off. 7. Gently lower the cod into the oil, cooking for 4-5 minutes on each side until golden and crispy. If the oil is too hot, the batter will brown too quickly and the fish will be undercooked inside. If it’s too cold, the fish will absorb excess oil and become soggy.  8. Once ready, drain on paper towels. Repeat with thick onion slices for onion rings, perfect as a side. 9. For the tartare sauce, mix all ingredients and adjust the salt and acidity to taste. Add more mayo if you prefer a thicker sauce. Add chopped capers and fresh parsley for added taste (but just as good without-I didnt have them). 10. Toast buns, add cheese, tartare sauce, fried fish and more sauce. Top with the bun and enjoy!  #fishfillet #mcdonalds #homemade #fishburger #Recipe
