Add one egg and mix until smooth and creamy. Set in the fridge.  Preheat your oven to 375 degrees F. Spray a muffin tin well with nonstick spray. Open the package of Jus-Rol™ Puff Pastry Dough and unroll it. Slice into 12 squares. Press each square into a well of your cupcake tin. Brush the outer edges lightly with the beaten egg. If the puff pastry has been out for a little while and is starting not to feel cold anymore, return it to the fridge for 10-15 minutes before proceeding. Drop dollops of the chocolate filling into each muffin cavity, filling about ⅔ of the way full. Bake the pan of pastry cups for 24 to 28 minutes, or until deeply golden brown. The filling will be puffy but will settle down as it cools (bang the pan on your counter 1-2x to help it settle). While the pastry bakes, spread your coconut on a pan in an even layer, and pop into the oven with your pastries to toast - let it go for 4-5 minutes then toss to brown it evenly, and return to the oven for 2-3 more minutes.  Let the pastries cool to room temp or until only slightly warm, then decorate with coconut & mini eggs to look like a robin’s nest!
