WILL IT TARTE TATIN ep. 1 - Beetroot 🫜🫜🫜 FULL RECIPE BELOW ⬇️ NOTE: this is for a 9" cast iron pan - measurements for a bigger/smaller pan will need to be scaled accordingly. INGREDIENTS: 8 medium beets 2 cups coarse salt/rock salt 1 bunch thyme 3 tbsp granulated sugar 1.5 tbsp sherry vinegar 3 tbsp unsalted butter 120g goat cheese 120g crème fraiche 60g whipping cream 1 lemon 1 sheet frozen puff pastry Fine sea/kosher salt to taste Freshly ground black pepper Fleur de sel (to finish) INSTRUCTIONS 1. Pre-heat your oven to 425 degrees F. 2. Spread your coarse salt out on a quarter sheet tray. Spread out your beets on the salt, and bake for 60-75 minutes, or until they can be pierced with a skewer or pairing knife with zero resistance. Turn the beets every 20 minutes while baking to ensure even cooking + seasoning. 3. Once your beets are done, remove them from the oven and let them sit for 5-10 minutes. Once cool enough to handle (but still warm), peel your beets. Slice them into 2-3mm thick slices, and organize them by size (larger vs. smaller slices). 4. In your cast iron skillet, or another heavy-bottom pan, spread your sugar around the pan in an even layer. Drizzle your sherry vinegar around the sugar. Place your pan over medium heat, and allow the sugar to caramelize (do not stir - just tilt your pan if needed to allow the sugar to caramelize evenly). When the sugar is light brown in colour (almost all the moisture will appear to have evaporated, and the caramel will be a syrupy consistency), turn the heat to low. Add 3 tbsp butter to the pan, and stir over low heat for 90sec-2min, trying to keep the glaze as emulsified as possible. 5. Turn off the heat and set your pan to the side momentarily (wait until your caramel stops bubbling, and settles down). CAREFULLY place your beets around the pan in an overlapping spiral, being sure to keep the beet slices as close together as possible. I made the outer ring first with the larger beetroot slices, then made the smaller ring in the middle with the smaller slices. When finished, season the beets with plenty of fresh thyme leaves, salt and pepper. 6. Cut your puff pastry into the shape of your pan, and place it over your beets. Gently fold and tuck the edges of the pastry around the beets. Poke holes around the pastry with a fork, and put in the oven to bake for 25-30 minutes at 400 degrees Fahrenheit. 7. While your tarte is baking, make your whipped goat cheese. Pick 8-10 sprigs worth of thyme leaves into a bowl. Add the zest of one lemon, and your goat cheese, crème fraîche & cream. Season with salt and pepper to taste. Whip your goat cheese mix with a hand mixer until soft peaks form (don't over-whip). Keep in the fridge until ready to serve. 8. When the pastry on your tarte is golden brown, and when you look around your tarte and see no liquid pooling around the edge, remove the tarte from the oven. Allow it to rest for 10 minutes before flipping. 9. Check to make sure your pastry is not stuck to the pan at any point. If needed, slide an offset spatula or knife around the edge to release any sticking point. In one swift movement, flip your tarte onto a plate or cutting board. Garnish with fleur de sel, and a dollop of your whipped goat cheese. Enjoy!
