Toast the spices in a dry pan on medium heat until fragrant(2-3 minutes). Add the spices to the soup in the final 45 minutes of cooking. 6. Take out the ox tail and strain the soup. Season with salt and mushroom powder. Taste to see if it needs any other seasonings like fish sauce or sugar. 7.
