Ingredients 2½ cups flour 1½ cups sugar ¾ cup neutral oil or butter 2 tbsp milk 3 large eggs Lemon zest Juice of 1 small lemon (about 1 tbsp) Yellow food colouring Pinch of salt Pinch of vanilla essence 1½ tsp baking powder Method 1. Preheat the oven to 180°C. 2. In a bowl, add the sugar and oil. Whisk with an electric beater until the sugar has dissolved. 3. Add the 3 large eggs (or 4 small eggs) with a pinch of salt. Whisk again until the batter is fluffy. 4. Add some lemon zest (around 4–5 shavings) and the juice of one small lemon (about 1 tbsp). 5. In a separate bowl, whisk together the flour and baking powder. Add yellow food colouring, vanilla essence and baking powder. Mix again. 6. Mix the dry and wet ingredients together. Once mixed, add the milk and beat again. 7. Oil a rectangular baking tray and add the batter. Bake for 20–30 minutes, or until a fork comes out clean. 8. Let the cake cool, then cut it horizontally into ½-inch strips. Turn the cake vertically and make one long cut through the middle to halve it. 9. On a baking tray, spread the cake rusk pieces out flat. Place them back in the oven for 10–15 minutes at 150°C, keeping an eye on them until they’re crispy. 10. Turn off the oven once they’re crispy and leave them inside for 30 minutes. 11. They’re now ready to serve!
