Elote street corn chicken enchiladas 🌽 black plates are from @Stone Lain 🫶🏼 shoutout to @onebalancedbowl for the inspiration on this recipe! ingredients - 2 cups of shredded chicken - 9 flour tortillas - 1 1/2 cups of corn - 3/4 of shredded cheese ( i used mozzarella cheese ) - 3 tbsp cilantro (optional i don’t use it because i don’t like it ) - 12 oz of enchilada sauce - 8 oz of green chilis - 1/4 cup of crumbled cotija or queso blanco - 3/4 cup of mayo - 1 tbsp of elote seasoning - 1 tbsp of minced garlic - 1 lime juiced - salt - pepper In a large bowl, mix together shredded chicken, corn, cilantro, green chilis, and cotija or queso blanco. In a small bowl, mix mayo, elote seasoning, garlic, lime juice, salt, and pepper. Add to larger bowl that has chicken in it. Mix together to fully combine. In a 9x13 casserole dish, add about 1/2 of enchilada sauce and reserve the rest for the top. Heat tortillas in microwave with a wet paper towel over them for about 20 seconds. Add filling to tortillas and roll them up. Add into casserole dish. Pour over remaining enchilada sauce. Sprinkle your shredded cheese. Bake at 375 F for 25min.
