If you’re doing 3 eggs, a pan like the one in this video is good, anything larger and you won’t get a good omelette 3. Constantly moving the pan and scrambling at the same time (this helps it get fluffy and curdled on the inside while maintaining a smooth surface) 4. Fold don’t roll it when it’s done 5. Take it off when it’s 80% done (don’t worry it’s safe to eat) 6. Beat your eggs really well to make sure the yolk and white are completely combined. Season with only salt.
