Indian potato chaat canapés. EASY & ELEGANT Crunchy & zingy with the satisfying creaminess of potato. Impress your friends and family with these little bites at your next party. I love to get ahead and the components of these can be made ahead of time. They can be assembled just before your guests arrive, leaving you free to mingle! This recipe is based on Archana Mundhe’s (Ministry of Curry).👏 Ingredients: • 2 boxes of mini Croustades (48) • 4 medium red potatoes • 1 tbsp vegetable oil • 1 tsp cumin seeds • 1 tsp fennel seeds • 1 1/2 tsp grated ginger • 1/3 tsp ground turmeric powder • 1/4 tsp mild chilli powder • 1 tsp salt To serve • 1 tbsp unsalted butter • small jar of tamarind chutney • small jar of green chutney (mint, coriander + green chilli) • 1/2 cup plain yogurt + 1/2 tsp salt + 1 tsp sugar stir until smooth • 1/4 small red onion finely cubed • sev (Indian chickpea snack found in Bombay mix) • few sprigs of fresh coriander for garnish Optional: small pomegranate (Shop bought chutneys are fine here! If you’d prefer to make your own, I’ll be posting a green chutney recipe here soon.) Method: 1- Peel and chop the red potatoes into 3cm chunks and boil with a little pinch of salt. Once tender, drain and chop into small cubes or roughly mash. I prefer to mash as it’s easier to stuff the croustades. 2- Put the oil in a pan and heat it. Add the cumin and fennel seeds and stir over a medium heat for 30 seconds or so, then work quickly to add the ginger, chilli powder, turmeric, salt + potato mash. Careful not to burn the seeds. Stir well to combine the flavours. Remove from the heat. Leave to cool completely. You’re now READY TO SERVE! • Just before serving, take your croustades and pop them on a serving plate. Melt a tablespoon of unsalted butter and lightly brush the inside of each croustade. This will keep them nice and crisp. • Next pop in a little bit of potato mixture (fill 2/3 of each croustade). • Top with a little dollop of tamarind chutney, green chutney and the sweetened yoghurt mixture. • Next comes the sev, pomegranate seeds (if using) and a coriander leaf. Serve immediately. 🥂 Tips & getting ahead- *Make your potato mixture a couple of days before your party (store in an airtight container in the fridge. *Green chutney can be made the day before and stored in a tightly closed jar in the fridge. If you’re making it more than a day ahead then pour into an ice cube tray and freeze. Once frozen, pop in a freezer safe bag and you’re good to go! *The yoghurt mixture is super quick to make but it’s worth making it ahead too. Make it the day before and store in an airtight container in the fridge. *You can buy sev from Indian supermarkets. If you can’t get your hands on sev then just buy mild Bombay mix which usually contains pieces of spaghetti shapes sev of various thicknesses. *If you’re buying your chutneys, check the heat levels of these as intense chilli heat will ruin the balance of flavours of your chaat morsels! #food #partyfoodideas #canapes #indianfood
