RECIPE BELOW ⬇️ This is probably one of the tastiest salads I’ve ever made. It’s been on weekly rotation since I made it, and it’s always gone in SECONDS! Plus it’s such an easy recipe to make, and ready in minutes! Enjoy! DB x INGREDIENTS ▪️1 tsp butter ▪️300g sweetcorn (frozen/canned) ▪️1 tsp smoked paprika ▪️1/2 tsp chilli flakes ▪️Salt and pepper, to taste ▪️1/2 red onion, finely diced ▪️300g canned black beans ▪️1 red pepper, diced ▪️100g feta, crumbled ▪️Large handful of fresh coriander, finely chopped Dressing: 2 tbsp yoghurt, 2 tbsp mayonnaise, 2 tbsp fresh lime juice, 2 garlic cloves (minced) 1 tsp chilli oil, salt and pepper. If too thick, slowly add some water to loosen. METHOD ▪️If using frozen corn, thaw it and pat dry completely ▪️Over medium heat, add butter in a pan. Add sweetcorn, smoked paprika, chilli flakes, salt and pepper. Mix well. ▪️Cook for 5-7 minutes, stirring every now and then, until you get golden crispy corn. Meanwhile make your dressing by mixing together the ingredients. ▪️In a bowl add your red pepper, red onion, black beans, feta, coriander, corn and dressing.
