Jollof Rice “arancini” All the Smokey and beautiful flavours of classic west African Jollof with a crispy arancini like texture. May seem a bit crazy but trust me it was delicious. Serve it with pepper sauce for an easy appetizer or serve with stew meat for a delicious full meal. As a chef it’s fun to play around with flavours people are familiar with while still keeping things innovative, fresh, and respectful to the original recipe. For this I made sure that once you take that first bite the big smokey delicious flavour of Jollof is undeniable. RECIPE⬇️⬇️⬇️ Pepper blend 1 long cap pepper 1 red bell pepper 1 scotch bonnet pepper 2 field tomatoes 2 small white onion 1/2 red onion 1/2 bunch thyme 1 head garlic 1 thumb ginger Olive oil Long grain rice Bay leaf Dried thyme Dried rosemary Curry powder Chop all your ingredients into fairly even piece. Put it in a baking dish or a tray lined with parchment paper and roast in your oven at 400 for about 20minutes or until you’re getting some good colour on the vegetables. Remove from the oven and blend this mixture on high until fairly smooth and no large chunks. Chop the other half of red onion and cook it with lots of oil in a Dutch pot. Once your onions are cooked add bay leaf, dried thyme, and rosemary and allow this to continues cooking for a few minutes. Then add your curry powder and allow that to cook for an additional five minutes. Then add your pepper mix straight to this and allow to cook for another five minutes. This really builds your flavour. Then add your washed long grain rice as well as chicken stock, and a bouillon cube. Give it a stir and cover with tinfoil and lid. Turn down to a lower heat and allow to cook for approximately 20minutes. Remove lid stir and allow to finish cooking for another 15-20 minutes. You can essentially do this with leftovers from any rice based dish. Fried rice, Jollof, Rissoto the list goes on. As long as the rice itself has a lot of flavour you really can’t go wrong because all that crunchy texture comes from frying while the original flavour of the rice inside is unchanged.
