@zukoskitchen: Loaded roasted pepper purée soup 🫑🥕🍅 Ingredients (3-4 servings): •2 bell peppers •2 tomatoes •1 onion •4 carrots •1 big or 3 small garlic heads •Small cauliflower head •500ml chicken stock •80g butter •Olive oil •Ciabatta (for croutons) •80-100g bacon •Parmesan for garnish Seasonings: •Garlic salt •Smoked paprika •Oregano •Thyme •Chili flakes Recipe: 1. Cut up vegetables into even-sized chunks and place on an oven tray. Season with olive oil and spices and roast in the oven at 200*C for 40min. 2. Cut ciabatta into chunks and place in a large bowl. Mix with olive oil and spices, spread on an oven tray and cook in the oven for 10-15min ag 180*C 3. Cut up bacon into small cubes and place on a cold pan. Turn the heat to medium-high and fry until crispy. Place aside. 4. When the veggies have finished cooking, transfer to a large pot and blend together with cold butter and chicken stock until smooth and the soup reaches your desired consistency. 5.
