@aflavorfulbite: potato taco bowl 🥔🌮 - any dish that consist of crisp roasted potatoes is a winner in book! and so, naturally, this delicious recipe is my current obsession! each bite is packed with fresh, savory goodness!  what you’ll need: roasted potatoes  • 2 pounds Idaho potatoes, peeled & chopped  • 2-3 tbsp taco seasoning  • 2 tbsp oil taco beef • 1 pound ground beef • 1 packet taco seasoning, adjust to taste  • 1 small onion, finely chopped  • 2 large garlic cloves, minced  • 1 tbsp oil  pico de gallo  • 4 roma tomatoes, de-seeded and diced  • 1/2 cup onions, chopped  • 1 large jalapeño, chopped  • 1/4 cup cilantro, finely chopped • 2 large garlic cloves, minced  • juice (1) lime  • salt and pepper, to taste topping  • cheddar cheese, grated  • avocado  • sour cream  • fresh cilantro, finely chopped  here’s how to make it: 1. preheat oven to 425F. line a baking sheet with parchment paper. add potatoes and drizzle oil on top. sprinkle taco seasoning over potatoes and mix to combine. bake for 25-30 min flipping the potatoes halfway through bake time.  2. heat oil in a skillet over medium-high heat. add the onions and garlic and cook until tender and translucent, 2-3 min. add in the ground beef and use a spoon to break up. sprinkle taco seasoning over beef mixture and cook until beef is no longer pink, 3-4 min.  3. in a bowl, add all of the pico de gallo ingredients. mix to combine. divide potatoes into bowls. layer the beef on top followed by  the cheddar cheese, pico de gallo, sour cream and slices of avocado. top with additional cilantro and enjoy! ✨ #EasyRecipes #tacobowl #mealprep #asmrcooking #cookwithme #healthyrecipes
