The guy slapping it down is correct as well just not well done or the proper tools. It’s the old fashioned technique. he’s putting a near dry mortar then a mortar slurry and a mortar mix with additive

The guy was doing what we call a live set. when this method is done properly it is superior to anything your doing today. Was recently done at the world trade center.
