Let me know, does this count as salad?? . This has to be one of the easiest and tastiest way to eat roasted veggies. . The truffled burrata really makes it delicious, but I promise the veggies are just as good! . Here is how I made it: . 1.First, lets preheat the oven to 400F. . 2.Next, lets pick the veggies. I used Delicata squash, brown mushrooms, red onion, and Brussels sprouts. Feel free to use whatever vegetables you like. . 3.Roughly chop the veggies into larger chunks. I used 1 medium delicata squash, 2 cups of mushrooms, and 1 red onion. Toss each of them into their own bowl once chopped, then drizzle with 2-4 tablespoons olive oil, a pinch of salt, 1-2 tsp oregano, and 1.5 tsp smoked paprika. These seasonings were great, but you can add more or use whatever you prefer. Toss them well. . 4.I also used Brussel sprouts, I like to blanch my Brussels sprouts, so I brought a pot of water to a boil, added my Brussel sprouts, and boiled them for 7 minutes before tossing them into an icebath to shock them. Then just dry them, cut them in half, and toss them into a bowl with 1-2 tablespoons olive oil, a pinch of salt, and 1 tsp oregano and smoked paprika. Toss it well. . 5.Put the veggies in a sheet pan and into the oven for 25-28 minutes at 400F. Time varies by oven, so check around the 25 min mark. . 6.Once done, remove from the oven, plate them up, and enjoy as is, or elevate them further. . 7.To give them some serious personality, I topped it with truffle burrata cheese, drizzled some olive oil, and added some chili flakes and oregano on top. . It was SO GOOD. You can add some freshness with fresh basil or any herb to level it up, too, .
