@alexiskennedyofficial: What I Eat In A Day (Vegan) Pt. 6 😍🧀 | 𝐑𝐞𝐜𝐢𝐩𝐞 𝐈𝐧𝐟𝐨 𝐁𝐞𝐥𝐨𝐰👇🏽 #ad 🌱𝐕𝐞𝐠𝐚𝐧 𝐄𝐠𝐠 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬🌱: ~ 1/2 cup split mung beans ~ 1/2 cup oat milk + 1/2 cup water ~ 2 tbsp olive oil (+ more to coat pan) ~ 1 tbsp arrowroot starch ~ seasoning mix: 1 tbsp nutritional yeast, 1 tsp each (garlic & onion powder), 1/2 tsp each (black salt, sea salt & smoked paprika), 1/4 tsp each (black pepper & turmeric) ~ extra black salt to sprinkle after cooking (KEY for eggy flavor!) 📝𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬📝: 1. Rinse and drain mung beans. Add to a bowl covered with water and soak (4hrs-overnight). 2. Drain water and add beans to a blender with oat milk + water, oil and arrowroot starch. Blend until smooth. 3. Strain mixture to remove pulp. 4. Pour the strained liquid back into blender. Add seasonings and blend again. 5. Heat pan with oil (I used 3 tbsps) over medium heat. 6. Once hot, pour in egg mixture. Cook covered for 2-3 mins. Flip eggs and cook covered again for 1-2 mins. 7. Turn heat to medium low and scramble eggs for 3-5 mins. 8. Sprinkle xtra black salt before serving. Enjoy! ~ 𝐁𝐫𝐞𝐚𝐤𝐟𝐚𝐬𝐭 | 𝐋𝐨𝐚𝐝𝐞𝐝 𝐇𝐚𝐬𝐡𝐛𝐫𝐨𝐰𝐧𝐬🍳: hashbrowns, 2 @thelaughingcowusa vegan garlic herb cheese wedges, seasoned mashed avocado, vegan eggs, chili crunch oil & green onion ~ 𝐋𝐮𝐧𝐜𝐡 | 𝐂𝐚𝐩𝐫𝐞𝐬𝐞 𝐒𝐚𝐧𝐝𝐰𝐢𝐜𝐡 🥪: ciabatta bread, pesto sauce, 3 @thelaughingcowusa vegan garlic herb cheese wedges, marinated tofu (recipe at bottom👇🏽), tomatoes (s+p, Italian seasoning, red pepper flakes), massaged arugula (olive oil, s+p, lemon juice) & balsamic glaze ~ 𝐃𝐢𝐧𝐧𝐞𝐫 | 𝐊𝐢𝐦𝐛𝐚𝐩🍱 : vegan kimbap, edamame (chili crunch oil, agave, coconut aminos, sea salt), kimchi & dipping sauce (vegan mayo, sriracha, agave) 🌱𝐓𝐨𝐟𝐮 𝐌𝐚𝐫𝐢𝐧𝐚𝐝𝐞 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬🌱: ~ 16 oz super firm tofu, pre-pressed & drained ~ 1/4 cup coconut aminos ~ 3 tbsps hot water + 1 tsp vegan chick’n bouillon paste ~ 2 tbsps olive oil ~ 1 tbsp lemon juice ~ seasoning mix: 2 tbsps nutritional yeast, 1 tbsp Italian seasoning, 2 tsps each (garlic & onion powder), 1.5 tsps poultry seasoning, 1 tsp each (black pepper & smoked paprika) & sea salt to taste ~ 2 tsps liquid smoke ~ 1 tbsp agave (optional) 📝𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬📝: 1. Pat tofu dry and cut into desired-sized slices. (The thinner the slices, the better it marinates) 2. Create marinade by combining all remaining ingredients. 3. Lay tofu slices flat in a refrigerator-safe container and pour marinade on top (I use a baking dish covered with foil so tofu can be fully submerged). Marinate tofu overnight. 4. Pan fry on stove until browned on both sides. Drizzle leftover marinade and cook until caramelized. 5.
