@victoriatschoppp: HIGH PROTEIN SNACKS PART 8: ELOTE DIP 1 1/2 cup roasted corn 1/4 cup nonfat greek yogurt 1/3 cup cottage cheese (blended) 1 tbsp everything but the Elote seasoning 1/4 cup Cotija cheese 1 lime juice 2 tbsp cilantro I used frozen roasted corn for this recipe from trader joes, you can also roast your own corn or use canned. Heat up 1.5 cups of your roasted corn in a pan. In a bowl, combine your roasted corn, greek yogurt, blended cottage cheese, Elote seasoning, Cotija cheese, lime juice, and cilantro. Place in a dipping bowl and top with more cotija cheese Mix well and enjoy with crackers or veggies of your choice. *notes- if you do not have Elote seasoning, you can make a DIY version with 2 tbsp chili powder, 1/2 tbsp smoked paprika, 2 tsp sugar, 1 tsp cumin, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt. I also feel the flavor develops better when it sits, so if you want extra flavor- make it the night before and place in the fridge!
