Salted Caramel Banana Bread This one really opened my eyes. I always thought banana bread was kind of boring but With the addition of the salted caramel that also soaks into the batter as it cook plus the extra bananas on top that caramelize as the bread bakes really took this simple banana bread recipe to new heights. It’s super easy to make and only took me about 20 minutes from start to finish to put this together not including baking.   Recipe ⬇️⬇️⬇️ Ingredients,  6 ripe bananas  1 teaspoon baking soda  1/2 cup sugar  1/3 cup light brown sugar  1 teaspoon cinnamon  1 teaspoon nutmeg  1 teaspoon salt  1 egg 1 teaspoon vanilla extract  1/3 cup unsalted butter 1.75 cups AP flour  For Caramel - 2 cups sugar, 2 tablespoons cold butter, 100ml water, 2 teaspoons kosher salt, and squeeze of lemon juice  Method, Peel your bananas. Add half to a bowl and mash with a fork. The other half of the bananas slice length wise and layer in the bottom of a well greased or parchment lined baking tin. Whisk each ingredient slowly in to the mashed banana except for the flour. Once all the ingredients have been incorporated slowly add your flour. Start with a whisk and then switch to a spatula once mixture starts to thicken. Give it a good mix with the spatula making sure that everything is even. In a medium skillet add your sugar Water and lemon juice. Turn this to high heat and allow to start melting. The acid helps prevent the sugars from crystallizing. Allow this to get to a golden brown. Then remove from heat and whisk in your butter. Once combined pour this over your sliced bananas add your batter on top and bake at 355 for 25 minutes or until a fork comes out clean.
