@aflavorfulbite: creamy sausage and tortellini soup ✨ - for me, soup season has been extended especially as the temperature remains in the better off indoors range. to help with this winter chill, i am staying warm and cozy with a big bowl of this delicious soup.  what you’ll need: • 1  Small yellow onion, Finely chopped  • 6 Large garlic cloves, Minced  • 1 Ib Italian sausage • 10 oz Cheese tortellini  • 7 oz Julienne Sun-Dried Tomatoes  • 5 cups Chicken Broth • 1 cup Half & Half  • 1/2 cup Parmesan Cheese  • 2 tbsp Tomato Paste • 2 tbsp Flour  • 1 1/2 tsp Italian Seasoning  • 1 tsp Red Pepper Flakes • Salt & Pepper, to taste  • 1 tbsp Olive Oil  here’s how to make it: Heat oil in large pot under medium high heat. Add and sauté the onions and garlic until fragrant and translucent. Add in the sausage. Use a spoon to break it up and cook until the sausage fully browned, 4-5 min. Mix in the tomato paste and then the flour. Lower the heat to medium-low. Mix in the chicken broth, sun-dried tomatoes, Italian seasoning, red pepper flakes, salt and pepper to taste. Simmer soup for 10-12 min. Stir in the tortellini and cook for 6-8 min. Lastly, mix in the half&half and Parmesan before adding the spinach. Cook for 2-3 min or until the spinach is fully wilted.
