so maybe it isn't Coriolis forces cause water vortices down drains , maybe it's an electromagnetic phenomena .

Water shape can be affected by many things including gravity. Also its own natural chemical structure is more prone to curving. It only flattens out when forced to, it craves a curve.

And what happens if you plug the sink up? And let that water run for 3 minutes and then turn the water off. How does the top of the water look, that's sitting in the sink? The top of the water will be flat and the bottom of the water will take the shape of the sink.
