@kimberlys_journey: CHEESY CHIPOTLE BEEF TACOS Ad Delicious tacos and dirty rice using @capsicana_original seasonings to make my weekend fakeaways easier & tasty, with less ingredients to purchase they are always a winner and make meal times exciting! This makes 8 tacos and serves 4: For the beef: - 500g 5% fat mince - half a diced onion - Half a diced red pepper - 2 crushed garlic cloves - 3tbsp tomato puree - @capsicana_original sachet Toppings/ fillings: - @capsicana_original mini tacos - 60g Mozzarella / cheddar cheese - Coriander Spicy “sour cream” - 100g fat free greek yoghurt - 2 crushed garlic cloves - Juice of 1/4 lemon - Pinch salt - Tsp chipotle paste Rice: - 240g dry rice - 500ml water - Stock cube Start off by frying off the veg in low calorie cooking spray until it’s soft, then add the garlic & fry for a further 30 seconds. Add in mince making sure you break up any larger pieces. Stir in the seasoning, tomato purée & water, leave to simmer for 5 mins. Boil your rice in stock, then once it’s cooked add some of the beef mix, and stir well. Layer the tacos with some of the beef, top with cheese, and any other toppings, fold in half and fry until they go crispy.
