Add kimchi and mix to coat with butter and pork fat. Mix occasionally so the flavors of kimchi and pork cook together, about 5 minutes. 4. Increase heat to high and add water, kimchi juice, fish sauce, sugar, and Dasida. Cover and let it come to a boil. Once boiling, reduce heat to medium and cook until kimchi becomes wilted and translucent, about 7 minutes, covered. Add beef franks and Spam, and bring to a boil over medium-high heat. Reduce to a simmer until stew is flavored with Spam and beef franks, about 5 minutes (add sliced tofu and green onion if you wish).
