But after 60 minutes, reabsorption begins. The steak starts pulling that salty brine back in, locking in moisture and allowing protein denaturation to tenderize the meat. So if you're short on time, season and cook immediately before osmosis fully kicks in. But if you want the best results, wait at least an hour—even better, 3-4 hours. The longer you let the salt work, the deeper the seasoning, the better the moisture retention, and the more tender, flavorful, and juicy your steak will be!
