JUICY ROASTED CHICKEN & SPICY CILANTRO SAUCE This is one of my most favorite easy healthy recipes. I used the oven for these, but they’re perfect and super crispy in the air fryer if you have one. And this is one of my all time favorite sauces, perfect any protein, power bowls, tacos, you name it. Its in my Shredhappens cookbook if you have it, so may sure you make it if you’ve got my book! Here is how I made it: 1.Start with 1.5 lbs of bone-in skin-on chicken thighs. I like to cook these up with the skin and bone to add maximum flavor and make it “juicy”. If you prefer to go leaner, you can use skinless or go with your favorite cut. But trust me, this makes a difference. You can always remove the skin before eating. 2.Add chicken to a bowl, drizzle with 1 tbsp olive oil, add the juice of 1.5 limes, 3-4 finely minced fresh garlic cloves. 3.Then add a couple pinches salt, fresh ground pepper, 1.5 tbsp paprika, 1/4 tsp cayenne pepper, 1/2 tbsp onion power, and 1/2 tsp cumin, give everything a good mix to make sure the chicken is evenly coated. 4.Cover the chicken and let sit for 1-2 hours before making it. If refrigerated, I like to take it out about 30 mins before cooking so the chicken comes up to room temp. 5.I recommend airfrying these at 425F for 18-20 mins. Time varies by airfryer, so just keep an eye on it. If using an oven, I go 415F for 30-35 mins - again time varies by oven & you want to get to 165F internal temp. 6.I topped it with my spicy cilantro sauce. In a food processor mix a large handful fresh cilantro, 2-3 cloves garlic, 1 jalapeño (with seeds removed all the way or slightly to control spice level), juice of 1.5 limes, 2 tbsp sour cream, 1 tbsp olive oil, a couple pinches sea salt, 1 tbsp chile lime seasoning. Process well, then adjust to taste. Salt is key in this recipe. You can meal prep more of this for easy healthy meals, but keep sauce separate.
