@lori_ilc: Strawberry banana bread 💗 one of my favorites 🥰 Recipe -2 medium bananas, mashed (¾ cup) -½ cup butter, melted and cooled slightly -½ plain greek yogurt (sour cream works as well) -⅓ cup brown sugar -¼ cup granulated white sugar -1 egg -1 tsp vanilla -2 cups all purpose flour -2 tsp baking powder -½ tsp salt -1 cup diced strawberries tossed in 2 tbsp flour Strawberry glaze: -2-3 tbsp of diced strawberries -1 cup powdered sugar -1 tsp vanilla extract -1 tbsp milk Directions: 1. Preheat oven to 350 and grease a 9x5 loaf pan prepared with parchment paper. Set aside. 2. In a large mixing bowl, add bananas, melted butter, plain Greek yogurt (or sour cream), sugars, egg, and vanilla extract. Whisk until combined and sugars are dissolved. 3. In the same bowl, add flour, baking powder, and salt. Mix until ingredients are well combined. The batter will be thick. 4. In a small bowl, toss diced strawberries in flour. Gently fold diced strawberries in batter. 5. Place the batter in your prepared loaf pan and bake for 50 minutes - 1 hour or until inserted toothpick comes out clean. 6. Let the banana bread cool in the pan for 20-25 minutes. 7. For the strawberry glaze; add the diced strawberries, powdered sugar, vanilla extract, and milk to a small bowl.
