@daywithmei: Nabulsi Cheese & Olive Oil Ice Cream 🧀🫒🍨 EVOO is from @Huwa Olive Oil (not spons, just a fan of their stuff!) it’s unlike many other olive oils I’ve tried. It starts light then punch you in the back of the throat with citrus and pepper (in a good way), totally different than the more common mild and nutty oils. This was also my first time trying nabulsi cheese. It’s a Palestinian brined cheese originating from Nablus. It’s dense in fresh-brined form though becomes soft and elastic when heated. I followed bilal’s instructions to let the cheese soak in fresh water overnight so it’s less salty, then incorporated it into the ice cream. The flavor really comes through even in frozen form— it’s got a much more distinct milk flavor than akawi cheese (which is what’s typically used in knafeh i’ve had here).
