Salsas That I Love Series! Toasted Chile de Arbol Tomatillo!! Two things! I substitute Chile japones for Arbol in the video. They have pretty much the same flavor profile. And I was out of cilantro this day! lol! It was delicious! Toasted Chile de Arbol Salsa Toasted chile de arbol combined with dry roasted tomatillos is one of my favorite salsas! There are so many variations of tomatillo salsa to be prepared and enjoyed! Try thinking outside the box when you approach a salsa recipe. Combine fresh chile peppers with dried chile pods. Mix tomatillos with tomato to add different levels of flavor. Prep Time- 20 minutes Cook Time- 30 minutes Yields- 1 ½ cups 12 dried chile de arbol, 8 gr, weight without the stems 1 c water 6 med-large tomatillos, 349 gr, remove husk, wash tomatillos 2 serrano peppers, 26 gr, stems removed 1 tsp. avocado oil 4 cloves of garlic, 20 gr, leave skin on Salt to taste Instructions Heat griddle to medium heat. Add the chile de arbol. At the same time, heat a small saucepan with 1 cup of water on medium heat. As soon as the chile de arbol become aromatic and begin to blacken, turn them quickly. Leave them for only another few seconds. Transfer them to the saucepan with simmering water. Set heat on low. At medium heat, on the griddle, add serrano peppers, tomatillos and garlic. Drizzle with 1 tsp. of oil. Using tongs, move the ingredients around to coat them with some of the oil. Continue roasting the tomatillos and garlic for another 15 minutes. Remove from the heat and cover the ingredients with foil paper for 10 minutes. The steam created will finish cooking the tomatillos all the way through. When ready to blend, Remove skins from garlic. Reserve the water in the saucepan. To the blender the chile de arbol, serrano peppers, garlic, tomatillos, 1/2 c water reserved from softening chiles and salt, to taste. Blend on high for 45-60 seconds. If the salsa is too thick, pour in a little more of the water from cooking the chile de arbol. Store salsa in glass jars, if possible, in the refrigerator for 5-6 days. Tips & Variations: Toasting the chile de arbol will add a smoky toasted flavor to the salsa as opposed to just boiling the peppers. You can substitute the tomatillos with Roma tomato for a red salsa. If you prefer the tangy flavor of tomatillos, toast 2 chile California with the arbol peppers for a more intense red salsa. I especially enjoy serving this salsa with beef cheek or beef tongue tacos.
