no, after it gets to the point where the water beads, you’re supposed to turn it down to low and cook on low.

Butter is fine. But butter is not supposed to SMOKE like that or it’s burning - ie the pan is too hot.

Butter smoke point is 350 olive oil is about 450, cooking pancakes is about 325 I’d bet you had it about 550. Infrared thermometer about 15 dollars fail proof ❣️

SEASONED stainless steel user here. It takes like 2-3 mins to preheat stainless steel on a gas range. It takes 6-7 mins MAYBE on an electric stove.

The oil is used to seal the pan’s pores! Cook with butter AFTER sealing:) Butter & olive have VERY low smoking points! Avo, canola, & coconut for high heat & sealing. 10 min it’s good but lower 🥰

Heat it up, remove from the heat to cook a little, add the butter, then heat up again. I did the same thing but with coconut oil when I first got my Cutco Stainless Steel Pans…. And I started a fire😂
