@ourhealthy_kitchen: Jerk Sweet Potato Fries w/ Vegan Chi Fil la Sauce- Fries 2 large sweet potatoes, about 2 to 2 ½ lbs 2 Tbsp extra virgin olive oil 2 Tbsp. cornstarch, (for crispness) 3 Tbsp ground jerk seasoning ½ tsp. salt ½ tsp. ground black pepper fresh cilantro, for topping, (optional) (If you can’t find a Jerk seasoning blend, mix together 2 tsp. allspice, 2 tsp. paprika, 1 tsp. dried thyme, ½ tsp. cinnamon, ½ tsp. cayenne pepper, ½ tsp. ground cumin, & ½ tsp. powdered ginger) 1. Preheat oven to 450°. Line a large baking sheet with parchment paper. (not foil, we don’t want to eat aluminum :) )
2. Slice sweet potatoes into long strips, ¼ to ½ inch thick. Add the fries to a large bowl of cold water and soak for at least 30 minutes (or up to overnight. This will help make the fries crispy!) Drain and pat dry after soaking. 3. Place the dried fries into a large bowl or zipper bag. Add olive oil, cornstarch, jerk seasoning, salt and pepper. Toss until sweet potato strips are evenly coated.
4. Arrange sweet potato strips in even layers on baking sheets. Bake 10 minutes, gently flip, and bake 10 to 15 minutes more, until crispy.
5. Remove from oven and optionally sprinkle with fresh cilantro before serving. Serve with vegan honey mustard. Vegan chic-fil la sauce ½ cup vegan mayo 3 Tbsp Dijon mustard 3 Tbsp agave or maple syrup 2 tsp apple cider vinegar 1 tbsp smoked paprika 1.
