Steamed Chicken Roast Ingredients: * 4 chicken quarter legs * 1 cup yogurt * Equal amounts of coriander seeds, cumin seeds, and black pepper * 2–3 whole dried chilies * 2 tbsp roasted spice mix * 1 tbsp red chili powder * ½ tbsp turmeric powder * 1 tbsp ginger-garlic paste * 1 tbsp salt * Juice of ½ lemon * Sesame seeds Method 1. Make cuts in the chicken quarter legs and lightly fry until slightly golden. Remove and set aside. 2. Dry roast the coriander seeds, cumin seeds, black pepper, and whole dried chilies. Blend into a fine spice mix. 3. In a bowl, mix the yogurt, 2 tbsp roasted spice mix, red chili powder, turmeric, ginger-garlic paste, salt, and lemon juice. 4. Coat the chicken with the marinade and let it marinate for 1 hour. 5. Line a steamer with butter paper and make small holes in the paper. 6. Arrange the marinated chicken on the butter paper, sprinkle sesame seeds over the top, and steam for 30–40 minutes, or until the chicken is fully cooked and tender. 7.
