🦐✨ Celebrating National Prawn Day with a burst of flavour! Dive into this irresistible cheesy prawn risoni, topped with the freshness of juicy tomatoes and aromatic basil. Who knew indulgence could be this tasty? 🍅🌿 
 Ingredients: 
 1 packed Tassals Cooked Prawns 
 500g Risoni Pasta 
 1 large onion, Diced fine 
 200g fresh tomatoes, diced fine 
 200g baby bocconcini 
 4 garlic cloves, crushed 
 2 heaped tablespoons of tomato paste 
 1 cup of white wine 
 Mini Burrata (1 Per person) 
 1L chicken stock 
 Salt & Pepper 
 100g butter  
 Method:
 1. Start by removing the heads from the prawns and setting them aside.
 2. Then, carefully deshell the prawns, leaving only the tails intact, and set them aside as well.
 3. In a large saucepan, heat a drizzle of olive oil over medium heat. Add the chopped onion, butter and minced garlic, and sauté until they become softened.
 4. Next, add the prawn heads to the saucepan and cook for about 5 minutes, stirring occasionally.
 5. Stir in the tomato paste and white wine, allowing them to cook together for an additional 2-3 minutes.
 6. Remove the prawn heads from the saucepan and discard them. Add the risoni to the saucepan, stirring it into the mixture, and let it fry for a few more minutes.
 7. Pour in the chicken stock and reduce the heat to low-medium, allowing the mixture to gently simmer. Continue cooking until the pasta absorbs all the liquid, stirring constantly. If the liquid is absorbed but the pasta is not fully cooked, add 1 cup of hot water and allow it to absorb.
 8. Once the pasta is fully cooked, add the bocconcini cheese and stir until melted. Then, add the tomatoes and peeled prawns, stirring to incorporate.
 9. Finish by topping the dish with fresh basil and a mini  burrata, then serve and enjoy! #fy #fypage #fyp #prawns #prawnpasta #nationalprawnday
