@thepeachiespoon: 🫐FLOURLESS BLUEBERRY MUFFINS. Get your fruit and veggies in, in muffin form. These are easy one bowl🥣, GF, low sugar/carb perfection. WET🥣 🟣1/2 c drippy almond or peanut butter 🟣2 c cooked sweet potatoes, no skin or canned pumpkin (used pumpkin bc so easy) 🟣1/3 c egg whites or 2 eggs 🟣1 t vanilla 🟣1/3 c milk of choice (I used unsw cashew) DRY🥣 🟣1 c vanilla protein powder 🟣2 tsp cinnamon 🟣1/4 c monk fruit granulated sweetener 🟣1 tsp baking powder 🟣1/4 tsp salt 🟣1 pint fresh bluebs, or 1 cup frozen wild blueberries Mash potatoes in a large bowl, add other wet ingredients too & stir. (Make sure potatoes have cooled so no scrambled eggs🤓). Add wet and stir. Gently fold in blueberries. Use a 1/3 c scooper and place in a sprayed or lined muffin pan. Bake at 350° for 20-25 minutes. Store in fridge.
