Burnt Eggplant with Tahini (served with Vegan Naan)  Huge shout out to @amanatimusic  for the true music art.  📕Recipe here:  ❂ Ingredients:  For Eggplant w Tahini: 2 Medium Eggplants ⅓ Cup Tahini paste ¼ Cup Water 2 Tsp Pomegranate Molasses 1 Tbsp Lemon juice 2 Garlic Clove 3 Tbsp chopped Parsley  Salt/Pepper to taste Seeds from ½ large Pomegranate Olive Oil to finish For Vegan Naan:  160ml warm Water (100-110ºF) 2 Tsp Sugar 1 1/2 Tsp Yeast  2 Cups (250g.)All-purpose Flour 1/2 Tsp Salt 1/4 Tsp Baking Powder 1 Tbsp Avocado Oil plus more to oil your hands 2-3 Tbsp Finely Chopped Parsley ❂ Cooking process:  ⁃ First, burn the eggplant, around 20 min on the grill.   ⁃ Leave to drain for at least 30 minutes.  ⁃ Chop the eggplant flesh roughly and transfer to a medium mixing bowl.   ⁃ Add the tahini, water, pomegranate molasses, lemon juice, garlic, parsley and some salt and pepper; mix well  ⁃ To serve, spread over a shallow dish, scatter the pomegranate seeds on top and drizzle with oil. Naan Cooking Process:  ⁃ Stir the sugar in the warm water (100-110ºF)until dissolved. Add in the active dry yeast and whisk to dissolve. Set aside for 15 minutes.  ⁃ Stir together: all-purpose flour, sea salt, and baking powder.  ⁃ Once the yeast mixture has activated, pour it into the flour mix and add 1 tbsp of neutral-flavored oil.  ⁃ Mix the ingredients.  ⁃ Cover the dough with a clean dish towel and set aside for at least 90 minutes.  ⁃ After resting cut the dough into 8 pieces.  ⁃ Allow to rest for 10 minutes.  ⁃ Roll the dough into a thin oval shape.  ⁃ Sprinkle the naan with a couple sprinkles of chopped cilantro. Dampen your fingers in some water and carefully pick up the naan. Flip it onto its backside and pat a bit of water all over the backside.  ⁃ Flip the naan and cover the pan to steam the naan for 30 to 40 seconds.
