Heat a large saucepan to low-medium heat, add garlic and zucchini and sauté until the moisture has come out. Add lemon zest and salt, cook for a couple more minutes until golden and flavourful. 2. Once your cutlets have been funded, salt them and prepare your egg and breadcrumb mix. Dip the cutlets in to the egg mix, then into the breadcrumbs and pat well to ensure they are well breaded. 3. Take a 7x11 pyrex and coat the bottom with tomato sauce. 4. To the flat breaded cutlet, add a scoop of the zucchini, and a sprinkle of asiago cheese. Roll it up toughly and seal with a toothpick. Slice in half to create two thick and short pinwheels. Lay them cut side up in the pyrex.  5. Once the dish is filled drizzle the tops with more asiago and a drizzle of olive oil. Bake at 450F for 15 mins. 6. For the bruschetta, dice your tomatoes, add garlic, olive oil salt and marinate for a couple hours.
