nothingg better than buffalo chicken 👩🏼‍🍳 Sheet Pan Buffalo Chicken & Ranch Potatoes: -1 lb chicken breasts, cubed -paprika, garlic powder, onion powder, salt & pepper -1/4c flour -olive oil -mini potatoes, cut into small slices/cubes  -fresh broccoli -ranch seasoning (I use Simply Organic) -Buffalo sauce (I use Primal Kitchen) -Toppings: ranch or blue cheese dressing, blue cheese crumbles, crispy onions, etc Preheat oven to 400°F. Chop potatoes into small wedges and place on a sheet pan. Drizzle with olive oil & sprinkle with 1/2-1 packet of ranch seasoning mix (depending on how much ranch flavor you want), along with a pinch of salt & pepper. Toss until all potatoes are evenly coated and place in the oven. While potatoes are baking, cut chicken and place on another sheet pan. Season with paprika, garlic powder, onion powder, salt and pepper (I don’t measure, I just eyeball these). Add flour and ~1tbsp olive oil, and toss until chicken is evenly coated in flour and seasonings. Arrange in a single layer on one side of the pan, and place broccoli on the other side. I like to season the broccoli with a little bit of olive oil, salt, pepper and garlic powder. Place chicken and broccoli in the oven and cook for ~15-20 minutes, or until chicken is cooked through and broccoli is slightly crispy. At this point, the potatoes should be done (or close to done) as well — these usually take ~30-35 minutes. Remove both pans from the oven & toss chicken in buffalo sauce.  Assemble bowls with potatoes, buffalo chicken, and broccoli.
