GLUTEN FREE BANANA CC MUFFINS! 2 ripe bananas, mashed 2 eggs (or flax eggs for vegan) ½ cup coconut sugar ¼ cup melted coconut oil 1 tsp vanilla extract ¼ cup milk (non-dairy) 1 ½ cups gluten-free 1:1 baking flour (like Bob’s Red Mill or King Arthur) ½ cup almond flour (adds moisture & softness) 1 tsp baking soda ½ tsp baking powder ½ tsp cinnamon (optional, but adds warmth!) ¼ tsp salt ¾ cup DF chocolate chips (+ more for topping) Turbinado sugar for topping Preheat oven to 350°F and line a muffin tin with liners. In a large bowl, mash the bananas until smooth. Whisk in the eggs, maple syrup, melted butter, vanilla, and milk until well combined. Add the gluten-free flour, almond flour, baking soda, baking powder, cinnamon, and salt. Stir until just combined—don’t overmix! Fold in the chocolate chips, reserving some for topping. Scoop the batter into muffin liners, filling each about ¾ full. Sprinkle extra chocolate chips on top. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
