What debunks the Ace Theory for me is that when Luffy met Ace for the first time as a Kind (Marineford Flashback) he already got the Strawhat. So the years of Shanks visiting are already gone by.

I think Roger told him he is a celestial dragon. That's why after he died shanks told buggy he wasn't going to go look for the one piece. He probably then went back to the holy land.
