How to clean the greens, for one. To cover or not to cover? Bitter or sweet greens? Lemon or Vinegar as a dressing? To drink or not to drink (the cooking liquid)? ⁠ ⁠ Horta (pl.) are among the healthiest foods in the Greek diet. They’re packed with nutrients, antioxidants, important vitamins and minerals, and almost no calories. Consuming them frequently is one of the longevity habits of my fellow islanders on Ikaria. ⁠ ⁠ There are hundreds of different edible wild greens and herbs in Greece. At the farmers’ markets in Athens, you can find many varieties of both wild and cultivated greens.⁠ ⁠ So how to cook your greens?
