@stirthepaige: Herby Turkey Meatballs & Couscous Tzatziki: 1 1/2 cups plain Greek yogurt 1/2 cup grated English seedless cucumber 1 tbsp olive oil Juice of 1/2 a lemon Salt and pepper to taste Meatballs 1 lb ground turkey 2 scallions 1/3 cup parsley 1/4 cup mint 1/4 cup panko breadcrumbs 1 large egg 1 tsp salt 1/2 tsp black pepper Toppings 2 5 oz boxes of lemon & herb couscous prepared per the box directions (I like the Whole Foods brand) Arugula 1 cup diced cucumber 3 Roma tomatoes diced 1/4 red onion diced 3-4 tbsp minced parsley 2 tablespoons olive oil Juice of half a lemon Salt and pepper to taste 1. Mix all of the ingredients for the tzatziki in a bowl. Cover and set it in the fridge while you finish cooking everything else. 2. Finely mince all of the herbs and add that to a bowl with the turkey, panko, egg, salt and pepper. Mix that until combined. 3. Take 2 tablespoons of the meat mixture at a time and roll it into a meatball. Gently press it down to flatten it out a little bit. 4. Heat up a skillet over medium heat. Once hot, spray with avocado oil and ad the meatballs to the pan in a single layer. Cook for 3-4 minutes on one side then flip and cook for another 3-4 minutes or until the internal temp is 165. 5. While the meatballs are cooking prepare the couscous and the Shirazi salad. For the salad combine the diced cucumbers, tomatoes, onion and parsley in a small mixing bowl. Drizzle on the olive oil and squeeze the lemon juice into the salad. Season with salt and pepper and toss everything together. 6.
