As someone who works at Jersey Mike’s, I can say that neither our bread forms nor frozen loaves have changed in the last 10 years. Depending on how long the loaves are proofed, it makes them skinnier (less proof time, less rise, more dense) or wider (more proof time, more rise, typically more fluffy). Just 5 minutes ir so can change its width. As far as cutting, a loaf is 14 inches, and depending on how fast they cut them or if they are in a rush, the cut may not be perfect. Regardless, all meats are sliced to the exact same weight every time, that hasn’t changed…
