@ajdediego: Sweet potato circles make me happy. Try it. However many sweet potatoes you want, peel and chop into 1/4 inch thick circles. Boil until just fork tender and drain. Lay them on paper towels to dry, then season with salt, pepper and any other seasoning you want. Pour 2 tbs olive oil in a large skillet over medium heat and get it nice and hot. Lay the sweet potato circles in one layer, sear for 3-5 minutes, flip and sear until both sides are browned.
