It’s always a world of possibilities with bread, even with these Japanese Styled Sandos 🍞🥚😋 I decided to make two, an egg mayo and a chicken katsu to go with my wholemeal bread and it was truly a dream 😮‍💨 Not only were these hearty, they were so delicious and easy to pack! I was already looking forward to lunch at 10am 😂 I used Sunshine’s 100% Whole Grains Ultra Fine Wholemeal Bread for one Sando and Enriched White Bread for another, and as part of my 21 days challenge in forming a habit with wholemeal bread. I was really impressed that they were both equally fluffy and flavourful, and I am all ready to onboard the habit of having wholemeal bread  👍🏻 May I also interest you with the oven method of frying chicken? No more mess from deep frying, with similar flavours. Just make sure not to forget to season 🧂 Recipe (more available in profile / blog too, including cup measurements) (1) Chicken Katsu Sando - 2 Slices of Bread - 2 Tbspns of Oil (I used Olive Oil) - 1 Cup of Panko Bread Crumbs - 1 Egg, Mixed well - ¼ Cup of Flour (Seasoned generously with salt and pepper) - 4 - 5 Pieces of Chicken Fillet / Thighs - Vegetables of Choice - Sauce of Choice, I used Teriyaki Steps: 1. Pan fry the panko bread crumbs in heated pan with oil at medium-low heat until of desired brownness / crisp (I took approx 8 - 10 mins) 2. Dip each chicken in egg, followed by flour and then panko bread crumbs 3. Oven fry the chicken in pre-heated oven, 200C, 18 - 22 mins. The panko will not darken that much more here! 4. Assemble the sandwich with sauces and vegetables of choice (2) Egg Mayo Sando - 2 Slices of Bread - 6 Hard Boiled Eggs - 3 Tbspns Japanese Mayo - Salt and Pepper Steps: 1. Prepare 6 hard-boiled eggs (10 mins in boiling water) 2. Mash the eggs until pea-sized before adding salt, pepper and mayo and mashing further to a creamy consistency 3. Assemble the sandwich, and pack more egg mayo at the side 4.
