Peel 1 papaya and 2 mango. Either julienne (annoying), slice (easier), or cube (easiest) the fruit. Add to a large bowl.
2. Add 2in piece ginger, 2 jalapeño, 1/4c lime or @yuzuco juice, 2 tbsp tamarind or pom molasses, 1 tbsp soy sauce, 3 tbsp cane sugar, 3/4 cup cilantro to a food processor and processing until finely chopped. Taste for seasoning.  3. When ready to serve, spoon some of the dressing onto the papaya, a little less onto the mango, and toss to combine. Pile the papaya on the base of a platter. Scatter chopped cashews on top. Then the mango. Then more nuts. Then chopped cilantro. roast chicken mole colaradito 🍗 1. Soak 6 guachillo and 2 chipotle dried chiles in 2 cups hot water for 20 minutes. Then blend with 1/4 raisins, 1 small onion, 8 garlic cloves.  2. In a small pan add 1/4 sesame seeds, 1/4 breadcrumbs, 8 black pepper corn, 2 tbsp cinnamon, 1 tbsp oregano and heat over medium heat until aromatic. Dump into blender and incorporate into the sauce.  3. In a large pan, heat 1/4 cup neutral oil over medium-high heat. Once shimmering, add the sauce and incorporate. Then add in 24 oz tomato puree. Season with salt. Simmering for 20 minutes, adding some chicken stock or water to thin out. 4. Meanwhile roast 1 or 2 spatchcocked whole chickens. I drizzle mine with salt and olive oil, then roast at 425F for about 1 hour, until breast registers 155-160F.
