@hamishcookstuff: Butter chicken with Naan bread Ingredients: Marinade: 700g chicken thigh 2 tsp crushed garlic 2 tsp crushed ginger 2 tsp garam masala 1 tsp turmeric powder 1 tsp cumin 1/2 tsp chilli powder 1/2 cup Greek yoghurt Curry: 2 tbsp butter 1 brown onion Same spices as in the marinade. 1 tsp crushed garlic 1 tsp crushed ginger 1 cup tomato puree 1/2 cup cooking cream Garlic Naan bread: 1/2 cup self raising flour 1/2 cup Greek yoghurt 1 tbsp butter 1 tsp crushed garlic Finely diced parsley 1. Dice up the chicken thighs and place in a bowl. Add the spices as well as the crushed ginger and garlic and the Greek yoghurt. 2. Mix until all the chicken is thoroughly coated in the marinade. 3. Place in the fridge to marinate for around 1-2 hours. 4. Once the chicken is done marinating, heat a pan on medium high heat and fry the chicken until around 60-70% cooked. 5. Once the chicken is cooked, remove from the pan and set aside. 6. Finely slice 1 medium sized brown onion and set aside. 7. Heat a pan on a medium high heat with a tablespoon of butter and sauté the onion along with the same spices as added before. 8. Then add the crushed garlic and ginger as well as the crushed tomato/puree mix until all well combined. 9. Then add the cream before adding to a blender and blitz into a thick puree. 10. Pour the curry sauce back into the pan along with the chicken. 11. Simmer on medium high heat for around 5-10 mins. 12. Make the naan bread by to a bowl adding, Greek yoghurt and flour. Mix together and then place the dough on a floured surface to knead. Knead until smooth but stretchy. 13. Stretch into 1 cm thick layers and place in a greased pan for around 2-3 on medium heat before flipping. 14. To make the garlic butter, melt 1 tbsp of butter and then add 1 tsp of crushed garlic and some finely chopped parsley. 15. Brush garlic butter on each side and then let dry. 16. Top the butter chicken with an extra drizzle of cream/ yoghurt and some finely chopped parsley on top and serve with the naan bread. 17.
