Bolani  Dough: 3 1/2 cups all-purpose flour (580g) 1 1/4 cups water (300g) 1 tsp salt Method: Combine flour, salt, and water in the bowl and kneed until the dough comes together in a ball. It should not be too sticky or too dry. You may use a little more or less water. Once it’s smooth, cover and let it rest for 30 mins.  Potato Filling: 1 1/2 pounds (680g) potatoes  2 cups (140g), spring onion  1 cup (60g), parsley  1/2 cup green pepper (optional) 1 tsp salt or to taste 1 tsp black pepper 1 tsp chili flakes 1 tsp coriander powder 2 tbsp olive oil Method: Peel the potatoes and boil until soft. Mash the potatoes and add the chopped green onions, green pepper and oil. Season and set aside. Leek Filling (alternative to potato filling): 2 leeks (only green part) 1-2 hot green chiles, minced (optional) 1/4 cup cilantro,  Salt & pepper, to taste Method: Add all ingredients to a food processor and blend. Forming the Bolani: Divide the dough into 8 equal pieces and roll into balls. Roll out the ball and put the filling on half of the circle. Fold and seal the edges. Heat some oil in a pan on medium high and fry the bolani until golden brown on each side.
