they make the "continuous" tape light now that has a built in diffuser. Looks clean without the track. Tracks still have a place though

The brand I use recommends an aluminum diffuser track it helps dissipate the heat they highly recommend. They recommend that you don’t stick them directly to the bottom of a cabinet.

It depends on the job for me, if they have granite countertops I use track. Because you see the bulbs in the reflection if you don’t.
