With mycosynth lattice on the battlefield if I play something that destroys all artifacts does that essentially start the game over cuz lands will be destroyed as well correct?

You are mistaken about how Mycosynth Lattice works. Lattice only makes cards in play artifacts, not anywhere else. Encroaching Mycosynth affects everything everywhere, though.

mirran spy and lotus petal gets you infinite mana to do a lot of this way faster, and displacer kitten blinking emry fills up ypur graveyard super fast to get what you need.

I actually misplayed Lattice for years. encroaching will do the job for your graveyard, but Lattice doesn't seem needed for the deck. It'll only make your graveyard colorless rather than artifacts.

except if you have the Giant out, stonecoil is automatically a 2/2 because you're essentially "paying" 0+2 to cast it, and you can't ignore a cost modification unless another card says otherwise
