They actually have a running clock on them and wait lists are generally an estimate. It also could be just to slow down kitchens orders so you already have a seat but they don’t want to seat you right

It’s a running clock. The hostess is giving you a general time and it’s not an exact. Which is why you could get called earlier or later. When I worked at a restaurant it was roughly 45 mins to 1 hr to flip a table based on how many people at the table or how many courses.
